Balsamic Raspberry Steak Salad

Ingredients:

  • 1 lb elk steak or steak of choice (marinated 6-24 hours, see below for marinade recipe)
  • 1 head lettuce, chopped
  • ¼ large red onion, diced
  • 1 cup raspberries
  • 1 large avocado, diced
  • ¼ cup blue cheese crumbles (optional)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon crushed black pepper
  • 1 garlic clove, minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • 1 Tbsp honey (optional)

Directions:

Steak Marinade
  1. Whisk all ingredients together in medium sized bowl.
  2. Lay steaks in glass pan.
  3. Marinate by submerging steaks for 6-24 hours.
Balsamic Raspberry Steak Salad
  1. Preheat grill to medium heat, 300 F, cook steaks until desired doneness 5-8 minutes on each side.
  2. Wash produce chop lettuce and spin dry in salad spinner. Dice onions and avocados add to salad as toppings along with raspberries and blue cheese crumbles.
Balsamic Vinaigrette
  1. In a small mixing bowl, whisk together the Dijon, salt, pepper, garlic, balsamic, olive oil, and honey as desired.
  2. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully mixed.
  3. Store in a jar with a lid and refrigerate. Shake well before serving

This sweet and savory balsamic raspberry steak salad with homemade dressing is one of my favorite summer recipes because it’s got a tangy fresh flavor!

I love adding contrasting ingredients to salads from creamy avocado to sweet raspberry to balsamic vinegar, it has a variety of textures. Every fork full and bite you get something different in this balsamic raspberry steak salad!

Salads are a great weeknight option and they don’t have to be boring. Add a protein, some extra toppings and try a homemade dressing to change it up. I cook extra steak because I love this easy marinade and to use for leftover lunches.

Balsamic Raspberry Steak Salad With Homemade Dressing Nutrition Info:

Elk Steak: lower in fat than beef, high in protein, zinc, vitamin B12, niacin and vitamin B6. Elk has approximately 23 grams of protein per 3 ounces!

Raspberries: high in fiber, antioxidants and vitamin C.

Avocado: full of potassium (many Americans are not getting the recommended daily amounts) and are also high in heart healthy fats.

Balsamic vinegar: contains antimicrobial compounds, acetic acid, and antioxidants. There are several potential health benefits associated with balsamic vinegar.
