Healthy Buffalo Chicken Spaghetti Squash

Ingredients:

  • 1 lb chicken or turkey breast, cooked and shredded
  • 2 cups bone broth
  • 1 medium spaghetti squash, halved
  • 1 tbsp olive oil
  • 1/2 cup celery stalks, thinly sliced
  • ¾ cup carrots, shredded
  • 1 bunch green onions, white and green parts thinly sliced
  • 1/4 cup diced red onion
  • ½ cup spinach, chopped
  • 4 Tbsp blue cheese crumbles (optional)
  • 1/2 cup buffalo sauce (I use extra)
  • ½ cup mozzarella, shredded
  • ½ cup cottage cheese

Directions:

Roasting the Squash
  1. Slice spaghetti squash in half lengthwise and scrape out the seeds.
  2. Line a rimmed baking sheet with foil and coat the cut-side of the spaghetti squash with olive oil.
  3. Place the squash face side down on the lined baking sheet.
  4. Roast the squash for approximately 35-45 minutes, or until fork tender and easily pierced with a forked.
Crockpot Shredded Chicken
  1. Turn crockpot on low
  2. Place chicken or turkey in the crockpot, cover completely in bone broth.
  3. Cook 3-4 hours, remove chicken from broth and shred with a fork.
Assemble the Stuffed Squash
  1. Place chicken, celery, carrots, onions, spinach, mozzarella, cottage cheese and buffalo sauce in a large bowl. Toss and mix together.
  2. Spoon squash mixture into the squash shells.
  3. Return the stuffed spaghetti squash shells back to the baking sheet and place in 350°F oven for 10-15 minutes or until heated through (can also scrape out squash, layer on filling and bake as a casserole).

Buffalo Chicken Spaghetti Squash Recipe

If you love buffalo chicken dip you’ll love this healthy buffalo chicken spaghetti squash recipe. Spaghetti squash is a great pasta alternative and an easy way to get some extra veggie servings in. The savory creamy saucy stuffing makes it AMAZING. It’s a healthy comfort food meal and full of nutrition!

These spaghetti squash leftovers are so good that you won’t want to share. It’s addicting with the perfect mix of melty cheeses, vegetables, flavorful sauce and lean protein. This meal will keep you full and satisfied.

Cooking Tips:

1.) To make this recipe less time consuming you can always buy pre shredded chicken or a rotisserie chicken.

2.) You can also scrape out the spaghetti squash into a large glass casserole pan,  layer  the  filling  on  top  and  bake  it  at  350  degrees.

Spaghetti Squash: is a great pasta alternative high in fiber, vitamin C, manganese and vitamin B6. Spaghetti squash also has many ways of being prepared including roasting, microwaving or baking it!

Chicken: chicken breasts are a quality lean protein source. The number of calories in various cuts of chicken varies and light meat typically has the lowest calories.

Celery: celery is low in calories but that doesn’t mean it doesn’t have any nutrition value! It’s full of fiber, vitamin K, vitamin A, and potassium.

Spinach: Spinach is packed full of nutrition. It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron and calcium.

Buffalo Sauce: buffalo sauce is a great way to flavor and heat food up! It’s low calories and packed with spice.
