Crunchy Roasted Chickpea Recipe

Ingredients:

  • 1 can chickpeas, rinsed, drained and patted dry
  • 1 Tbsp olive oil
  • ½ Tbsp of lemon zest
  • 1 tsp garlic, minced
  • ½ tsp onion powder
  • Sea salt

Directions:

  • Preheat oven to 400F
  • Rinse the chickpeas thoroughly, drained and pat dry with a paper towel.
  • Then spread them in a single layer on a baking sheet.
  • Bake 30 to 40 minutes, or until the chickpeas are golden and crunchy. Shake the baking sheet or use a spatula to move chickpeas around to rotate sides.
  • While waiting for the chickpeas to roast, in a large bowl combine oil, lemon zest, garlic and onion powder. Optional to add paprika or curry powder.
  • Toss the hot chickpeas with the oil and spice mixture and sprinkle with salt to taste.
  • Enjoy them hot out of the oven! They don’t stay crispy long.

Crunchy Roasted Chickpea Recipe

I often get asked for healthy salty crunchy snack ideas. This crunchy roasted chickpea recipe are delicious snacks and so versatile. Adding different seasonings is one of the best parts of making roasted chickpeas because you have so many options. By the way if you didn’t already know chickpeas are also called garbanzo beans so you may see that on the label while shopping for them. Chickpeas is the main ingredient for hummus and tahini!

Chickpeas are a plant-based protein option for vegetarians and vegans. They are high fiber and a slower digesting carbohydrate source as well. If you eat more of a plant based diet, this is an awesome snack idea!

These salty crispy beans are awesome, affordable, and have minimal ingredients. What’s not to love? Chickpeas make an excellent addition to salads, soups, and curries! Try a meatless Monday or  get  creative!

Chickpeas: First of all they are delicious and have a buttery nutty taste. Secondly, they are an affordable protein source and easy to prepare!

One cup of cooked chickpeas equates to single serving of protein and they are packed with fiber.

Chickpeas have been shown to help control blood sugar, aid in digestion, lower cholesterol and promote satiety with meals.

These beans also have iron, calcium, and other micronutrients in that contribute to healthy bone structure and strength.

Bonus Nutrition Tip: Canned chickpeas retain much of their nutrition and are comparable to dried beans!
