Easy Strawberry Rhubarb Crisp

Ingredients:

  • 2 cups rhubarb, sliced ½ inch
  • 1 cup sugar
  • 2 cups strawberries, sliced and quartered
  • 3 Tbsp cornstarch
  • 1 Tbsp lemon juice
  • 1 ½ tsp vanilla extract

Directions:

  1. Preheat the oven to 350°.
  2. In a medium glass bowl, toss the rhubarb with 1/2 cup of the sugar and let sit for 10 minutes, stirring occasionally.
  3. In another bowl, toss the strawberries with the remaining 1/2 cup sugar and let stand for 5 minutes, stirring occasionally.
  4. Pour the rhubarb and strawberries into a strainer and get rid of any juice.
  5. Add cornstarch, lemon juice and vanilla to the fruit and stir well. Transfer the mixture to a 9 x 13-inch glass baking dish.
  6. Combine all of the topping ingredients in a medium glass bowl. Mix the ingredients together until large crumbs form.
  7. Sprinkle the topping evenly over the fruit filling and bake for 50 minutes.
  8. Let the crisp rest for 10 to 20 minutes before serving.

Easy Rhubarb Crisp

Summer time means fresh berries and rhubarb. This easy strawberry rhubarb crisp is a crowd pleaser and delicious. Sweet tangy fruit with a crunchy topping is one of the best treats on earth.

This is the first rhubarb recipe I have ever made. Technically, it’s a vegetable but you treat it like fruit. It’s very tart but when you add a little sugar and cook it down, it becomes a true dessert. Try this fruity crisp and give rhubarb a chance!

I may or may have not made this homemade strawberry rhubarb crisp multiple times in a week. Adding it to plain Greek yogurt for a breakfast option makes me look forward to my first meal!

Pro Tip: If you add more strawberries you’ll end up with more liquid.

Rhubarb: Technically rhubarb is a vegetable, although it is generally referred to as a fruit because it is used either with fruit or interchangeably with fruit in recipes. Rhubarb is low in carbohydrate, high in fiber and contains vitamin K and vitamin C.

Strawberries: Strawberries are very rich in antioxidants and plant compounds, which may have benefits for heart health and blood sugar control. Strawberries are also high in vitamin C!

Oats: Studies show that oats and oatmeal have many health benefits including weight loss, lowering blood sugar levels and a reducing the risk of heart disease. Oats are great source of important vitamins, minerals, fiber and antioxidants.

 

P.S sometimes the easy strawberry rhubarb crisp is gone in one sitting, it’s okay to make a double batch! It counts as eating a serving of veggies!
