Grilled Lemon Butter Salmon Bowl

Ingredients:

  • 4 tablespoons of butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 2 tablespoons capers
  • 4 (4-oz.) salmon fillets
  • 3 lemons, sliced
  • 1 spaghetti squash
  • 2 large heads of broccoli
  • 2 tablespoons olive oil 
  • 1 lemon, juiced and zested
  • 1 garlic clove, minced
  • ¼ teaspoon black pepper
  • Pinch of salt

Directions:

Grilled Lemon Butter Salmon
  1. In a microwave safe bowl, heat butter until soft, almost melted. Stir in garlic, lemon zest, and salt. Brush butter mix over salmon fillets.
  2. Preheat grill to medium-high. Place fillets on top of foil, drizzle lemon butter and place lemon slices on salmon. Wrap up into foil pouches. Cover grill and cook until salmon it is no longer transparent, check with a fork, 15 to 20 minutes.
  3. Top salmon with capers and serve with spaghetti squash and broccoli.
Spaghetti Squash and Broccoli
  1. Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  2. Slice the spaghetti squash in half lengthwise, right down the center. Scrape out the seeds and place it on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Chop broccoli into desirable size pieces and place in large glass bowl with olive oil, season lightly with salt and pepper.
  4. Roast the squash and broccoli for 30 to 35 minutes, or until the strands easily scrape away from the sides and broccoli tender.
  5. Right before the squash is finished roasting, heat a skillet over medium-low heat and add the butter. Once melted, stir in the garlic and cook for 30 seconds. Stir in the lemon juice, zest and a sprinkle of salt and pepper. Bring the mixture to a simmer then turn off the heat.
  6. Once the squash is all scraped from the skins, place it in a bowl or on a plate and gently toss with the lemon butter and serve with salmon.

Lemon Butter Salmon with Spaghetti Squash and Broccoli

Butter, lemon and capers is the best trio for grilled salmon, hands down. The lemon butter salmon bowl is a unique spin on a classic recipe. Lemony Butter salmon pairs perfectly with spaghetti squash and broccoli. This meal is full of rich flavorful nutrient packed foods.

Having a lemon butter salmon bowl for a leftover lunch at work is one of the most exciting parts of my day. The spaghetti squash and broccoli with lemon butter is a great way to change up your veggie game and is still something to look forward to eating it the next day.

Grilled Lemon Butter Salmon Bowl Nutrition Info:

Salmon: Salmon provides a good source of high-quality protein and heart healthy omega-3 fatty acids. The fat and omega-3 content vary from one species to another. Omega 3s have been shown to reduce inflammation, lower blood pressure and decrease risk factors for disease. Salmon is an excellent source of several B vitamins, which are needed for energy production, controlling inflammation and protecting heart and brain health.

Spaghetti Squash: Spaghetti squash is low in calories but high in fiber, vitamin C, manganese, and vitamin B6. Spaghetti squash is high in beta-carotene and vitamin C which are two antioxidants that can curb free radical formation and reduce your risk of chronic diseases.

Broccoli: Broccoli is high in fiber, which promotes gut health and may reduce your risk of various diseases.

Broccoli is high in many vitamins and minerals, including folate, potassium, manganese, iron, and vitamins C and K1.

Lemon: Lemons are high in heart-healthy vitamin C and several beneficial plant compounds that may lower cholesterol. Vitamin C and citric acid, help you absorb non-heme iron from plants. This may prevent anemia.
