Peanut sauce kale chips are my new favorite crunchy savory snack.
My summer garden produced a ton of kale! I don’t love raw kale so I had to try some new ways of cooking it. Peanut sauce kale is my new reason to remember to water my garden because I can’t stop thinking about kale chips. Kale has been deemed a “superfood” for good reason. It is a super nutrient dense vegetable and can be so versatile. You can add it to soups, smoothies and salads. Kale as a side dish is also wonderful. Try kale sautéed or baked, I personally like sautéed. Check out this ground meat kale bowl or a brussel sprout kale salad.

Kale: Kale is high in vitamin C and actually contains more than an orange! Not only does it contain other vitamins but it also has calcium, potassium and magnesium, which often are lacking in today’s average diet. Kale also contains substances that have been linked to lowering cholesterol.
Olive Oil: Olive oil is high in monounsaturated fats and contains vitamin E and K. Olive oil has research demonstrating benefits for lowering blood pressure and inflammation.
