Peanut Sauce Kale Chips

Ingredients:

Directions:

  1. Preheat the oven to 350 F and spray a baking sheet with olive oil spray or aluminum foil while the oven is heating.
  2. Wash the kale and dry thoroughly with paper towels or with salad spinner. Take the rib out of the middle and discard. Tear the kale pieces into desired size.
  3. In a small bowl combine the nut butter, oil, and spices with a whisk.
  4. Use your hands to massage the kale leaves until each one is evenly coated with the spice mixture.
  5. Lay the kale leaves out flat on a baking sheet. Do not overlap. Bake for 10-12 minutes until crisp, but still green. Enjoy!

Peanut sauce kale chips are my new favorite crunchy savory snack.

My summer garden produced a ton of kale! I don’t love raw kale so I had to try some new ways of cooking it. Peanut sauce kale is my new reason to remember to water my garden because I can’t stop thinking about kale chips. Kale has been deemed a “superfood” for good reason. It is a super nutrient dense vegetable and can be so versatile. You can add it to soups, smoothies and salads. Kale as a side dish is also wonderful. Try kale sautéed or baked, I personally like sautéed. Check out this ground meat kale bowl or a brussel sprout kale salad.

Kale: Kale is high in vitamin C and actually contains more than an orange! Not only does it contain other vitamins but it also has calcium, potassium and magnesium, which often are lacking in today’s average diet. Kale also contains substances that have been linked to lowering cholesterol.

Olive Oil: Olive oil is high in monounsaturated fats and contains vitamin E and K. Olive oil has research demonstrating benefits for lowering blood pressure and inflammation.

Everything But The Bagel Seasoning:  This simple (yet exemplary) blend of Sesame seeds (white and black), poppy seeds, dried garlic & onion, and sea salt flakes is all you need for bringing that crunchy, roasted, savory flavor to grilled chicken, buttered popcorn, baked potatoes, creamy dips, pizza dough, salad dressings, pasta, and Mac & cheese.
