Sausage Kale Potato Soup Dairy Free

Ingredients:

  • 1 lb sausage of choice (summer sausage, Italian sausage, chorizo)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 large russet potatoes, diced
  • 1 large head of kale, chopped
  • 32 oz chicken broth
  • 1 Tbsp balsamic vinegar
  • 2 tsp salt
  • 1 can garlic roasted tomatoes
 

Directions:

  1. Place sausage in a large soup pot over medium-low heat and cook until done.
  2. Add the onion, garlic and potatoes and cook for 5 minutes.
  3. Add kale and cook, stirring constantly, for 2 minutes longer.
  4. Stir in the chicken broth, vinegar, salt and pepper.
  5. Bring to a boil, reduce heat, cover and simmer for 1 hour. Stir in the canned tomatoes and cook, uncovered, for 15 minutes.

Sausage Kale Potato Soup

We love Alaskan farmer’s market kale and potatoes! Naturally we decided to make a savory sausage kale potato soup. Just to keep the Alaska theme going we made it with moose summer sausage and it turned out fantastic. You can also use chorizo or other variations of Italian sausage. This dairy free broth based soup is great during the summer with fresh veggies and game meat.

We decided to skip the cream, making this a dairy free friendly version of zuppa toscana so everyone can enjoy it! This is a great weeknight recipe and a meal for guests. Pair this sausage kale potato soup with some freshly baked bread and a vibrant salad!

Pro Tip: Chop all the veggies the night before if you are going to eat it as a weeknight meal. You could also dice extra potatoes and onions to use in other meals throughout the week.

 

Sausage Kale Potato Soup Nutrition Info:

Kale: kale is a part of the cabbage family and a cruciferous vegetable. Kale get a lot of hype because it is a very nutrient veggie. It’s rich in vitamin C, A and K. I prefer kale cooked and love it in soups.

Potato: potatoes are tubers that grow on roots. There’s something about Alaskan grown potatoes that taste so good. Believe it or not despite what diet culture says about potatoes they contain vitamins, minerals and fiber!

Moose Meat: Moose meat is a great protein option that often has much less fat than beef. In this case we made homemade sausage with our moose. Most people will add a little fat for flavor so the fat content may differ.
