Shredded Chicken Taco Salad

Ingredients:

  • 2 cups lettuce
  • ¼ avocado or guacamole
  • 2 Tbsp fresh green onion
  • ¼ cup fresh cilantro (optional)
  • Salsa (see recipe) or use what you like!
  • Tortilla Chips (optional)

Directions:

Chicken
  • Add all ingredients to the slow cooker
  • Set on low for 4-6 hours, halfway through cooking, stir and shred chicken

I love making shredded chicken as a protein meal prep staple for the week. You can use this shredded chicken taco recipe, on salads, with eggs, on a sandwich you name it!

This easy crockpot recipe is a great way to spice up your weekday meals.

Shredded Chicken Taco Nutrition Info:

Chicken: Chicken is a type of poultry that is high in protein and, when eaten without the skin, quite lean. A typical portion is about 4 ounces or the size of a deck of cards and provides about 28g protein.

Avocado: Avocados are very high in potassium, heart healthy fats, fiber and antioxidants. I recommend keeping your avocado ¼- 1/2 per serving.

Tomatoes: are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate and vitamin K.

Add those spices full of antioxidants and flavor in! Shredded chicken recipes are endless!
