Turmeric Chicken Vegetable Soup

Ingredients:

  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 lb boneless fresh chicken breasts, chunks
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 2 sprigs of fresh thyme or dried
  • 2 springs of fresh rosemary or dried
  • 2 springs of fresh sage or dried
  • ½ -1 Tbsp turmeric
  • 2 tsp sea salt
  • 1 tsp freshly ground black pepper
  • red chili flakes (optional)
  • 1 scoop gelatin (optional)
  • 2 cans of chicken broth

Directions:

  1. In a large crockpot, add chicken and broth.
  2. Add in the carrots, celery and onion, fresh herbs, and spices. Make sure chicken is submerged in broth and mix everything together.
  3. Cook 6-8 hours on low heat.
  4. Serve and enjoy!
  5. Remember to reheat leftovers, especially if you used gelatin!

Everyone needs a hearty healthy soup recipe for cold winter days.

 

I created this delicious turmeric soup when I was feeling a bit under the weather and needed a nourishing broth-based soup. I love the heartiness of root vegetables and the flavor of chicken soup especially during the colder months. This is a perfect weekend recovery meal and is full of flavor. A crockpot full of comforting winter soup will make the house smell amazing and help you feel better with every tasty bite. In my opinion, it’s the best thing to eat when sick. I added in a few extra antioxidant sources with the turmeric, fresh herbs and garlic. So much flavor and so good for you!

First of all, what is turmeric?

  • Turmeric, a plant related to ginger, grown in Asia and Central America.
  • It has been used in Ayurvedic medicine, for many conditions, including breathing problems, rheumatism, serious pain, and fatigue.
  • Often used as a dietary supplement for inflammation; arthritis; stomach, skin, liver, and gallbladder problems; cancer; and other conditions.
  • Turmeric is a common spice and a major ingredient in curry powder. Its primary active ingredients, curcuminoids, are yellow and used to color foods and cosmetics.
  • Other pieces of the plant are made into capsules, tablets, teas, or extracts. Turmeric powder is also made into a paste for certain skin conditions.

Turmeric: there is a reason it’s a popular spice right now! It has scientific research behind it’s medicinal properties (however most studies use large amounts of supplementation). Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant. Stay tuned for more conclusive research for the benefits related to inflammation, heart disease and cancer.

Gelatin: I like adding gelatin to my crockpot recipes to increase the amino acid content. Gelatin has been shown to play a role in joint health and brain function, and may improve the appearance of skin and hair. Don’t forget your leftovers will be jello after refrigerated! You’ll have to reheat your soup.

Garlic: contains antioxidants and garlic supplements even have research to show they may help prevent and reduce the severity of common illnesses like the flu and common cold!
