Healthy Zucchini Boats

Ingredients:

  • 3 zucchini
  • olive oil spray
  • 1/2 lb. Italian sausage
  • 1/2 lb. Ground meat of choice
  • Italian Seasoning, Fennel, Salt, Pepper
  • 1 Can of Rotel (hot or mild)
  • 1 Small Onion, Diced
  • 2 Garlic Cloves, Minced
  • 1 Cup Spinach, Chopped
  • Salt, Pepper, Red Pepper Flakes
  • 1/2 Cup Mozzarella, Shredded (or more depending on your preference)
 

Directions:

  1. Pre-heat oven to 400 degrees.
  2. Cut zucchini lengthwise in half. Scoop out the middle with a spoon.
  3. Place zucchini boats in a glass pan, spray oil lightly on zucchini and season with salt, pepper, red pepper flakes.
  4. On medium-high heat, in a large pan cook Italian sausage and ground meat. Add rotel, onions and garlic, salt, pepper, Italian seasoning. Cook until veggies are soft. Add the spinach and continue to cook until wilted.
  5. Stuff zucchini with the meat and veggie mixture. Shred mozzarella and lightly sprinkle cheese on top.
  6. Bake stuffed zucchini for 30 minutes or until zucchini is soft.

Healthy Zucchini Boats Nutrition Info:

Zucchini: contains water making it lower in calories and carbs but is high in essential nutrients like potassium, manganese, and antioxidants like vitamin C and vitamin A.

Spinach: is often referred to being a “superfood” because it’s extremely nutrient-rich . It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, calcium and fiber.

Tomatoes: are a also a good source of micronutrients including vitamin C, potassium, vitamin K and folate.

Mozzarella: great source of calcium, B12 and protein! Mozzarella is typically lower in calories and fat compared to other cheeses.  Grate it fresh for better quality and flavor!
